Warm Apple and Pear Salad with Walnuts and Cinnamon

Ingredients:
- 2 medium apples, cored and thinly sliced
- 2 ripe pears, cored and thinly sliced
- 1 tbsp coconut oil or olive oil
- 1 tbsp honey or maple syrup
- 1 tsp ground cinnamon
- ¼ cup walnuts, roughly chopped
- 1 tbsp fresh lemon juice
- Mixed greens (arugula or spinach work well)
- Salt and pepper to taste
Instructions:
- In a large pan, heat the coconut oil over medium heat. Add the sliced apples and pears, cooking for 3-4 minutes until slightly softened.
- Drizzle the honey (or maple syrup) and sprinkle cinnamon over the fruit. Stir to combine, cooking for an additional 2-3 minutes until the fruit is golden and fragrant.
- Remove from heat and toss in the chopped walnuts and lemon juice.
- In a large bowl, add the mixed greens and top with the warm apple and pear mixture. Season with salt and pepper to taste.
- Serve immediately as a refreshing and nourishing fall salad. Pair it with a warm soup or enjoy it on its own!
