Warm Apple and Pear Salad with Walnuts and Cinnamon

Ingredients:

  • 2 medium apples, cored and thinly sliced
  • 2 ripe pears, cored and thinly sliced
  • 1 tbsp coconut oil or olive oil
  • 1 tbsp honey or maple syrup
  • 1 tsp ground cinnamon
  • ¼ cup walnuts, roughly chopped
  • 1 tbsp fresh lemon juice
  • Mixed greens (arugula or spinach work well)
  • Salt and pepper to taste

Instructions:

  1. In a large pan, heat the coconut oil over medium heat. Add the sliced apples and pears, cooking for 3-4 minutes until slightly softened.
  2. Drizzle the honey (or maple syrup) and sprinkle cinnamon over the fruit. Stir to combine, cooking for an additional 2-3 minutes until the fruit is golden and fragrant.
  3. Remove from heat and toss in the chopped walnuts and lemon juice.
  4. In a large bowl, add the mixed greens and top with the warm apple and pear mixture. Season with salt and pepper to taste.
  5. Serve immediately as a refreshing and nourishing fall salad. Pair it with a warm soup or enjoy it on its own!
