Pumpkin Protein Pancakes

These cozy, fall-flavored pancakes are perfect for an autumn breakfast. Packed with protein and made with wholesome ingredients like almond flour and pumpkin, they offer a nutritious, grain-free start to your day. Ingredients:

  • 1/2 cup almond flour
  • 1 scoop Primal Complete Lean Vanilla Protein
  • 1/4 cup pumpkin puree
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger (optional)
  • 2 large eggs
  • 1/4 cup almond milk (unsweetened)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Coconut oil or butter for cooking

Directions:

  1. In a mixing bowl, whisk together the almond flour, vanilla protein powder, baking powder, cinnamon, nutmeg, ginger, and salt.
  2. In another bowl, whisk the eggs, almond milk, pumpkin puree, and vanilla extract until smooth.
  3. Combine the wet ingredients with the dry ingredients, stirring until fully mixed.
  4. Heat a skillet over medium heat and add a small amount of coconut oil or butter.
  5. Pour batter onto the skillet to form small pancakes (about 1/4 cup per pancake). Cook for 2-3 minutes per side, until golden brown and cooked through.
